It started in 1984 with community legend el Chaz. For decades, El Gallo Pitagórico served as a beloved gathering place for locals and visitors alike. Food was shared, connections were forged, and the soul of Guanajuato was celebrated in the iconic blue house below El Pípila.
Today, the founder’s sons are proud to carry that legacy forward. Xolazul is their reimagined vision, blending the rich culinary traditions of Guanajuato with a contemporary approach. It’s their way of preserving the heart of the restaurant their father built, while creatively embracing the future. And the journey has just begun.
The team has already broken ground on the first floor, which will become a performance space and music venue. Built with natural practices—for structure, insulation, and soundproofing—this next phase brings Xolazul’s mission to life: fusing food, culture, artistry, and community into one vibrant home.
